Our specialist butchers share our passion for providing products that only meet the highest industry standards. From our state-of-the-art facility in Liosbaun, Co. Galway, we have assembled a team of 65 people, including highly skilled butchers, protein specialists and chefs all who are committed to providing our customers with the freshest products available. Meat is our passion, not only cutting and preparing meat, but also exploring how to cook it and how to get the best from it for our customers. Chefs trust us to deliver the best cut of meat that will be the centre and hero of their offering. We have a dedicated training centre on-site to up-skill all our staff as well as a professional kitchen and restaurant. This unique environment encourages collaboration and innovation and is also available for our customers to utilise. We have made these investments because we understand that the strength of our business comes, not from bricks and mortar or machinery, but from people and their passion for food.

OUR PARENT COMPANY

Irish meat products are renowned all over the world and Irish beef is second to none. Our exceptional team of butchers provide a world-class service to our customers and complementing our vast offering we also have the capability, reach and expertise to source niche products from all over the world. Legwork is the key: We visit supplier farms and inspect supplier premises to see what we’re going to get and how the animals are raised and processed. That’s how we ensure only the best cuts and most sumptuous tasting meat from our team of highly skilled butchers finds its way into your kitchen or onto your plate.

DEREK KEANE, PRODUCTION MANAGER

Derek has over 35 years’ experience in the meat industry and is a master butcher. He started out in small butcher shops honing his craft and now manages the production team within William’s Gate, overseeing our foodservice, bespoke sausage production, custom burger blends, and our new state-of-the-art retail production unit.

MICHAEL MCDERMOTT, OPERATIONS MANAGER

Michael has a holistic overview of our business having worked in all key areas such as transport, operations, purchasing and selling and has a genuine understanding of how to achieve excellence. He brings many years management experience within the Irish meat sector.

DAMIEN MULLIGAN, FINANCE DIRECTOR

Damien has experience in many industries including engineering, construction, electronics, renewables and food processing. Damien worked at one of Ireland’s largest meat processors for several years driving strategy with an emphasis on lean manufacturing principles and is now responsible for financial reporting, governance and driving our strategy for growth. He is a Chartered Management Accountant with a master’s degree in supply chain management.

JO SHEERIN, TELESALES MANAGER

Jo has over 15 years industry experience. Jo is a member of the senior management team in William’s Gate with responsibility for all aspects of our seamless customer delivery experience and the telesales team.

PADDY MAC DONNELL, TECHNICAL MANAGER

Paddy has a BSc. in Food Technology specialising in Product Development Technology from Glasgow Caledonian University in Scotland as well as Irish Food Science & Food Technology qualifications. He has multi-disciplinary experience within the food industry both internationally and in Ireland. Before joining William’s Gate, Paddy spent eight years working within the Irish fresh meat sector.

GERARDINE GANTLY, HR MANAGER

Gerardine holds a BA in Human Resources Management and an Honours Degree in Business Management from GMIT in Galway. She gained extensive experience working in multinationals in the US, the Middle East and Europe, before bringing her wealth of knowledge back to her hometown of Galway.

SLAWEK KLINGER, TRANSPORT MANAGER

Slawek oversees the organisation of all schedules and transport routes and leads a team of experienced drivers ensuring your order arrives to you on time, in full and in premium condition.

PAUL COGHLAN, DISPATCH MANAGER

Paul has extensive industry experience, having worked in multinationals in Europe for several years before returning to his native Galway. Paul leads two dispatch teams picking orders ready for dispatch across our network.
